Ingredients

  • 2 salmon fillets, about 140–170 g each
  • 150 g uncooked rice, rinsed
  • 2 tbsp reduced-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp finely grated fresh ginger
  • 1 small garlic clove, grated
  • 1 tsp neutral oil
  • 1 small cucumber, thinly sliced
  • 2 spring onions, thinly sliced
  • 1 tsp sesame seeds, optional
  • Lime wedges, optional

Instructions

  1. Cook rice according to the package directions. Keep covered and warm while you prepare the salmon.
  2. Whisk soy sauce, honey, rice vinegar, ginger and garlic in a small bowl.
  3. Pat salmon dry. Heat oil in a non-stick skillet over medium heat. Cook salmon for 3–4 minutes on the first side, then turn and cook another 2–4 minutes depending on thickness.
  4. Pour the glaze into the pan and simmer briefly, spooning it over the fish, until glossy and the salmon is cooked through. For food safety, cook fish to 63°C at the thickest point, or follow local guidance.
  5. Divide rice between bowls. Add salmon, cucumber and spring onion. Spoon over any cooked glaze and finish with optional sesame seeds and lime.
