Ingredients

  • 4 salmon fillets (about 140–170 g each)
  • 750 g small potatoes, washed and cut into wedges
  • 1 red onion, cut into wedges
  • 1 tablespoon honey
  • 2 teaspoons mild mustard or Dijon mustard
  • 1 tablespoon olive oil for the glaze, plus 1 tablespoon for the potatoes
  • 1 tablespoon white-wine vinegar or lemon juice
  • Salt and freshly ground black pepper
  • Optional: steamed broccoli or green beans, to serve

Instructions

  1. Heat the oven to 190°C (375°F). Line two baking trays with baking paper, or use one large tray with space to keep the salmon separate from the vegetables.
  2. Toss the potato wedges with 1 tablespoon olive oil, salt and pepper. Spread them in a single layer and roast for 15 minutes.
  3. Add the red onion to the potatoes, turn the wedges, and roast for another 15 minutes. If the wedges are still firm, give them another 5–10 minutes while preparing the salmon.
  4. Whisk the honey, mustard, 1 tablespoon olive oil and vinegar or lemon juice in a small bowl. Season lightly with salt and pepper.
  5. Place the salmon fillets skin-side down on the lined tray. Brush the tops with the glaze and bake for 5 minutes.
  6. Brush the salmon with the remaining glaze, then bake for another 5–10 minutes, depending on thickness, until it flakes easily and reaches a safe internal temperature of 63°C (145°F).
  7. Serve the glazed salmon with the roasted potato wedges and red onion. Add steamed broccoli or green beans if desired.

Food safety: Keep raw fish separate from ready-to-eat foods and wash hands and utensils after handling it. Check the thickest part of the salmon with a food thermometer.
