These Japanese-inspired salmon bowls pair a savoury ginger-soy glaze with warm rice and cool, crunchy vegetables. This is a home-style adaptation, not a claim of a traditional regional dish.
Prep: 15 minutes · Cook: 15 minutes · Serves: 2
Ingredients
- 2 salmon fillets, about 140–170 g each
- 150 g uncooked rice, rinsed
- 2 tbsp reduced-sodium soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp finely grated fresh ginger
- 1 small garlic clove, grated
- 1 tsp neutral oil
- 1 small cucumber, thinly sliced
- 2 spring onions, thinly sliced
- 1 tsp sesame seeds, optional
- Lime wedges, optional
Method
- Cook rice according to the package directions. Keep covered and warm while you prepare the salmon.
- Whisk soy sauce, honey, rice vinegar, ginger and garlic in a small bowl.
- Pat salmon dry. Heat oil in a non-stick skillet over medium heat. Cook salmon for 3–4 minutes on the first side, then turn and cook another 2–4 minutes depending on thickness.
- Pour the glaze into the pan and simmer briefly, spooning it over the fish, until glossy and the salmon is cooked through. For food safety, cook fish to 63°C at the thickest point, or follow local guidance.
- Divide rice between bowls. Add salmon, cucumber and spring onion. Spoon over any cooked glaze and finish with optional sesame seeds and lime.
Substitutions and storage
- Use tamari only after checking its label if you need a gluten-free option; ordinary soy sauce commonly contains wheat.
- Refrigerate leftovers promptly and use within 1–2 days; reheat gently until hot throughout.
Allergen note: Contains fish and soy; optional sesame is another major allergen in many regions. Check condiment labels for wheat and cross-contact.
Cooked-rice safety
If serving with rice, cool cooked rice as quickly as possible, ideally within 1 hour. Refrigerate promptly, use within 24 hours, and reheat only once until steaming hot throughout. Do not leave cooked rice cooling at room temperature.
